Choi, an Australian native, started her hospitality career as a revenue manager and has since worked in various Starwood properties in Australia, China, and Malaysia. In 2005, she opened Sheraton Haikou Resort as the director of sales and marketing, and between 2007 and 2009 she headed the team in Sheraton Sanya Resort. She was also responsible for establishing cluster sales offices in Shanghai, Beijing, Guangzhou, and Russia for the three Starwood resorts on Hainan Island. Prior to this appointment, Choi was the director of sales and marketing for Sheraton Langkawi Resort.
